What Is Acacia Honey in Pakistan?
Acacia honey in Pakistan is usually sold as phulai shehad (پھلای شہد). Bees collect nectar from acacia flowers, then ripen and store it in the hive. The result is one of the palest honeys you can buy, with a soft floral sweetness.
The name can confuse people. In Europe and the US, “acacia honey” normally comes from the black locust tree (Robinia pseudoacacia). The honey sold under this name in Pakistan comes from the local phulai tree. The trees are different, but both honeys are known for their light colour and gentle taste.
Why Is Acacia Honey Still Runny?
Honey is mostly two sugars: fructose and glucose. Glucose forms crystals easily, and fructose does not. Acacia honey has clearly more fructose than glucose, so it can stay liquid for months, sometimes for years, depending on the batch.
This surprises some buyers. One common belief says pure honey must thicken. Another says it must never thicken. Both are too simple. Honeys with more glucose, such as mustard or sunflower honey, can set within weeks, while acacia stays clear for a long time. A jar that stays runny can be genuine, and a jar that thickens can be genuine too.
If a jar does turn grainy, that is a physical change, not spoilage. Tiny particles such as pollen can start crystals forming, which is one reason raw honey may thicken sooner than very finely filtered honey.

These are typical values for acacia honey in general, not lab figures for one batch. The vitamins and minerals are present in small amounts, so honey is better enjoyed for its taste than treated as a nutrient source.

Ideas Beyond a Spoon in Tea
- Overnight oats: mix 3 tablespoons of oats, 1 tablespoon of chia seeds, half a cup of milk or yogurt and a teaspoon of honey. Leave in the fridge overnight.
- Yogurt bowl: top plain yogurt with pumpkin seeds and a teaspoon of honey.
- Roasted vegetables: roast carrots or sweet potato, then brush on a little honey in the last five minutes so it does not burn.
- Sweet lassi: blend yogurt, cold water and a teaspoon of honey instead of sugar.
How to Choose Pure Honey
- The ingredient list should say honey and nothing else.
- Raw honey is honey that has not been heated or pasteurised. Ask any seller how their honey was processed.
- Ask for the lab report and certificates, and check that they are shown on the product page.
- Home tests, such as a drop in water, a lit matchstick or judging by thickness, are popular but unreliable. Proving that honey has been mixed with sugar syrup usually needs laboratory testing.
- Be careful with a very low price. Honey costs real money to produce, and beekeepers in online discussions often treat a price that is too low as a warning sign. A low price alone proves nothing, so ask for the lab report.
- Buy from a seller who gives a brand name, contact details and a way to reach them after you order.

- Close the lid tightly after each use. Honey absorbs moisture from the air, and too much moisture can make it ferment.
- Always use a clean, dry spoon.
- You do not need to refrigerate honey. Cold makes it thicken faster.
